- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, and melted butter.
- Add the eggs and vanilla extract, mixing until well combined.
- Stir in the cinnamon, nutmeg, ginger, and salt.
- Gradually add the flour, mixing until just combined. Fold in the pecans if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For a richer flavor, use freshly roasted sweet potatoes.
